My mission is to search for special products (no territorial limits) from (real) organic producers with whom I share the same sensitivity about food in general while Filomena makes her own fresh cheese and delicious veggie mix straight from our organic garden. Seasons are bearers of sacred products
We strongly believe that every season has its treasure and following the seasons guarantees we deliver only fresh, whole, healthy products to our guests. In a nutshell: in springtime we deliver risotto and main courses with wild herbs and buds growing in the fields; in summertime vegetables rule; autumn the time is right for BBQ's, “spiedo” (meat slowly grilled) and game; in winter time there are soups and special “pizzoccheri” (pasta) by Scuderia Castello.
It's our delight to tell our guests the story of the birthing of our dishes because what we really want is for you to be able to taste the subtle nuances of the food we prepare. Instead of eating while thinking about the daily issues, we wish you could stop and just savor in the variety of ingredients that we use, so you can really enjoy every one of them.
